This is a healthy, nutrient-dense beetroot and cocoa smoothie bowl that can be served as breakfast, as an afternoon snack, or why not after a workout?
1 small raw beetroot – washed and peeled
½ ripe avocado
1 dl frozen blueberries or other berries, raspberries or blackberries
1 dl frozen green peas
1 handful of leafy greens for e.g. fresh spinach, watercress or rocket
1 ½ tbsp raw cocoa 250 ml filtered water or unsweetened plant-based milk
Optional for more sweetness: 1-3 pitted dates
1 tbsp cocoa nibs
½ tbsp chia seeds
1 tbsp almond flakes
Handful of fresh or frozen berries
1 small green banana
1 tablespoon unsweetened almond butter
Mix all ingredients in a blender. Add more liquid if necessary.
Serve in a bowl and top with the toppings.
Enjoy!
You can also serve it as a smoothie in a glass, by adding more liquid.

Beetroot

Cocoa nibs
Cocoa nibs are made from cocoa beans. They are anti-inflammatory and associated with many health benefits such as strengthening the immune system, and may reduce the risk of diabetes. They can also help reduce heart disease by increasing the good HDL cholesterol. Just be careful not to overeat, as cocoa beans contain stimulants (caffeine and theobromine) that can affect sleep and cause tremors. Limit intake if you are pregnant or for children.
