
1 tablespoon avocado- or flaxseed oil
1 yellow onion, chopped
200g organic cannellini beans, precooked, drained and rinsed
150g frozen green garden peas
100g fresh (or frozen) organic spinach
100g kale, large stalks removed and chopped
1 fresh garlic clove (or 1 tsp garlic powder)
A few pieces of fresh thyme (or ½ tsp dried)
1-2 tbsp lemon juice or juice of ½ lemon
500ml organic vegetable stock
Pinch of sea salt and black pepper to taste
Optional topping
1 tbsp chopped fresh flat-leaf parsley or other fresh herbs
1-2 tbsp toasted pumpkin and sunflower seeds
1 tbsp dairy free yoghurt/kefir
1. Heat up stock with the spices, onions, oil and let simmer for about 3-4 min.
2. Add beans, kale, lemon juice and simmer for another 3-4 minutes.
3. Add the defrosted frozen peas, simmer for 1 min and remove from the heat.
4. Add fresh spinach. Pour the soup into a glass or metal blender and mix well (alt. use a hand mixer). Add more stock if the soup is too thick.
5. Taste and add salt and pepper to taste.
6. Serve with chopped fresh herbs and optional toppings. Enjoy!
