Scrambled tofu with turmeric

1 serving 

 

Ingredients  

1 tablespoon unflavoured coconut oil 

200g organic firm tofu

2 tablespoons nutritional yeast

0.25 tsp salt or organic vegetable stock powder 

0.25 tsp turmeric powder 

Pinch of fresh grinded black pepper

2 tbsp unsweetened and unsweetened almond- or soy milk or water 

0.25 tsp cumin powder

 

Optional: 

0.25 tsp garlic powder

 

Serving suggestions

1 slice toasted gluten free bread 

1/2 avocado – sliced or mashed

Fresh chopped chives or parsley 

Organic cherry tomatoes 

Organic mixed leafy greens – for example arugula and spinach 

Broccoli sprouts 

Pomegranate seeds

Radishes – thinly sliced 

 

How to 

 1. Melt the coconut oil in a pan on low heat.

2. Crumble the tofu into the pan. 

3. Add the liquids, salt or stock powder, nutritional yeast, turmeric and cumin. Mix all together and cook on low heat while stirring frequently until the water is mostly gone (approx. 4-5 minutes).  

4. Serve immediately with gluten free toasted bread, avocado, arugula, fresh broccoli sprouts, cherry tomatoes, chopped chives, radishes and pomegranate seeds. 

 

Tips

This is a great brunch recipe if you want a boost on the weekend. Serve with fresh or frozen mixed organic berries or a yerba matte smoothie.

 

Health benefits

This anti-inflammatory vegan brunch recipe is loaded with nutrients and a high content of fibre. 

Turmeric is an anti-inflammatory antioxidant by its powerful content of curcumin. To enhance the uptake curcumin is recommended to take together with fat since it is fat soluble.

Broccoli sprouts have a super high nutritional value and a high bioavailability. They contain high levels of sulforaphane, a phytochemical with strong health benefits, including cancer prevention. It’s also beneficial for supporting gut, heart and joint health. They are a good health addition to any salads or side dishes but just remember to always wash them properly before serving. 

The nutritional yeast gives a fuller, rounder flavour and is good to use when you want to avoid regular cheese and dairy products. In addition, it contains extra supplements of vitamin B (specifically B12), which is good if you eat a vegan diet.
