This is a delicious nutrition packed, high fibre, gluten and grain free bread which is easy to make – always a success!

Stig’s nut and seed bread

Ingredients 1 loaf:

100g pumpkin seeds

100g sunflower seeds

100g almonds

100g walnuts

100g linseeds

100g sesame seeds

1 ½ tsp iodised salt

5 organic eggs

1 dl coconut oil

 

Method:

1. Pour all the ingredients except the coconut oil in a large bowl and mix it.

2. Stir the coconut oil into the mixture so that it blends with the eggs.

3. Pour the mixture onto a baking tray lined with baking parchment or a cake tray.

4. Bake for 1 hour at 130°C.

5. Let the bread sit for 2-4 hours in the tray until it releases from the edges.
