1 large sweet potato approx 250 ml when boiled and smashed
2 eggs
80 ml coconut oil – melted and cooled
1 tbsp chia seeds
4 soft organic dates
1 tsp vanilla powder
3 tbsp raw organic cacao powder or unsweetened cocoa powder (difference)
3 tbsp coconut flour or shredded coconut
0.5 tsp baking powder
1 pinch of sea salt
100-150 ml dark unsweetened organic chocolate chips or chopped dark chocolate
1. Peel the sweet potato and cut into large pieces. Boil in water until soft, drain and let cool down.
2. In a kitchen food processor – add all the ingredients except the chocolate chips.
3. Add the chocolate chips and use a spoon to blend together.
4. Pour the mix to a parchment paper lined baking tray (20*20 cm). Bake in the preheated oven 175 C for 25-30 min.
5. Serve with fresh mixed berries.
This is a gluten and nut free chocolate brownie made with sweet potatoes. It has loads of fibre from the sweet potatoes, chia seeds, dates and shredded coconut. It is naturally sweetened by the sweet potatoes and the dates and healthy fat from the coconut oil.
Note there is a difference between raw cacao and cocoa. Raw cacao is the raw form before it’s processed. It tastes more bitter and is high in antioxidants, minerals and vitamins. It is available as a powder. Cocoa is a processed form, often found as a powder with added sugar and often used in baking and found in supermarkets. Its flavour is less bitter and also has less antioxidant, mineral and vitamins due to the processing of the fruit. Pay attention to which one you select if you are looking for the most healthy and nutritious option.
Cacao in its raw form is anti-inflammatory and is full of flavonoids and antioxidants. It’s thought to have many health benefits like improving blood flow, mood and brain function.
